Chris Lewicki's was the first response to a mailing I did yesterday to projects that have environmental education components. Here is another response.

EPA's SunWise School Program is a free, flexible environmental and health education program for grades K-8 that aims to teach children and their care-givers how to protect themselves from overexposure to the sun's harmful UV rays. SunWise Partner Schools receive informative and fun materials that facilitate cross-curricular classroom learning. The Program also encourages schools to provide a sun-safe infrastructure, including shade structures (e.g., canopies, trees) and policies (e.g., using hats, sunscreen, sunglasses) that promote sun protection in a school setting.
